Lightly sweet, buttery biscuits. Best served warm.

Recipe Ingredients for Lemon Blueberry Scones

2 c. flour
1/2 c. oats
1/3 c. sugar
3/4 t. baking powder
3/4 t. baking soda
1/2 t. salt
10 T. butter
1/2 c. dried blueberries
3/4 c. low fat buttermilk
1 t. lemon extract

Recipe Directions for Lemon Blueberry Scones

  1. Can use orange extract and cranberries.

  2. Mix dry ingredients. Freeze butter and shred in food processor. Mix in with dry

  3. ingredients in large mixer. Add fruit. Stir together milk and extract. Mix until

  4. just moistened. Do not overmix as the dough will become tough.

  5. Roll out to about to inch thickness and cut in triangles. Bake at 400

  6. degrees for about 15 minutes until edges are lightly browned.
