Recipe Ingredients for Lemon-Blueberry Otameal Pancakes

1/2 cup egg whites
1/2 cup oats
1/2 cup 2% cottage cheese
1 tbsp honey
1 tsp grated lemon peel
1/8 tsp baking powder
1/2 cup blueberries

Recipe Directions for Lemon-Blueberry Otameal Pancakes

Place all ingredients except blueberries in food processor or blender container. Blend until smooth. Stir in blueberries. For each pancake, spoon 1/4 cup batter on lightly oiled griddle heated to medium. when bubbles form on top and edges are dry, flip to other side; cook 1 1/2 to 2 minutes or until golden brown. Serve sprinkled wit powdered sugar, your favorite syrup or a drizzle of honey, if desired.
