tart, sweet, moist and healthy muffins. you can omit the glaze, but it makes the muffins ever more pastry-like!

Recipe Ingredients for Lemon Blueberry Muffins

1.25 cup White Flour, Unbleached
1/4 cup Whole Wheat Flour
1/4 cup Whole Wheat Flour
0.25 cup Sugars, Granulated
12 tsp No Calorie Sweetener
2 large Egg, White
2 cup Blueberries
2 tsp Baking Powder
1 lemon yields Lemon Juice
1/4 cup Powdered Sugar
1 lemon yields(47 g) Lemon Juice
1 cup Apple Sauce Unsweetened Organics
6 fl oz Original Almond Breeze Unsweetened

Recipe Directions for Lemon Blueberry Muffins

  1. heat oven to 350 degrees.

  2. mix dry ingredients. mix wet ingredients. add wet ingredients to dry mixture and stir to combine. stir in blueberries and 1 tablespoon lemon rind if desired. spoon into greased muffin tin. bake 23-27 minutes or until cooked through and lightly browned on top.

  3. for glaze mix lemon juice with powdered sugar and 1/4-1/2 cup no calorie sweetner. drizzle over hot muffins.
