These tender, moist muffins are delicious with sweet blueberries and a snap of lemon. A green light on the GI diet.

Recipe Ingredients for Lemon Blueberry Muffins

1 1/2 cups whole wheat flour
1/2 cup wheat bran
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar (or 1/3 cup agave nectar)
1 cup skim milk
1 egg
1/4 cup canola oil
1 tablespoon grated lemon zest
1 cup fresh or frozen blueberries

Recipe Directions for Lemon Blueberry Muffins

  1. Preheat oven to 375 degrees

  2. Combine flour, wheat bran, baking powder, and salt in a large bowl.

  3. In another bowl whisk together the agave nectar, milk, egg, oil, and lemon zest.

  4. Pour the milk mixture over the flour mixture and stir to combine. Stir in blueberries.

  5. Divide batter into 9 lined muffin tins and bake for 20 minutes
