Recipe Ingredients for Lemon-Blueberry Muffins

2 cup all purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/4 cup smart balance
1 1/4 cup low-fat buttermilk
1 tablespoon grated lemon rind
1 large egg, lightly beaten
1 cup fresh blueberries
1 cooking spray

Recipe Directions for Lemon-Blueberry Muffins

Mix dry ingredients, set aside. Cut in smart balance spread (don't use light version) with pastry blender. Combine buttermilk, lemon rind and egg, stir well. Add wet ingredients to dry, stirring only until all is moistened. Fold in blueberries. Bake at 400 degrees for 20 minutes. Use heavy muffin tin so bottoms don't burn. Muffins will be light in color and spring back when touched.
