A lemon blueberry muffin with the added health of oatmeal.

Recipe Ingredients for Lemon Blueberry Muffins

1 1/4 cup flour
1 cup quick cooking oats
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp lemon zest
1 tbsp lemon juice
1 cup skim milk
1 egg white
1/4 cup Smart Balance oil
1 cup blueberries

Recipe Directions for Lemon Blueberry Muffins

  1. Combine dry ingredients in a large bowl.

  2. Combine egg white, oil and lemon juice, and stir into mixture. Stir in milk, just until moistened.

  3. Do NOT add blueberries to batter in the bowl.

  4. Spray muffin tin with nonstick cooking spray. Divide batter evenly among 12 muffin cups, and then distribute the blueberries evenly into each cup. (If added to the batter, the blueberries tend to clump.)

  5. Bake at 400 degrees for 15-20 minutes.
