Recipe Ingredients for Lemon Blueberry Mini Muffins

1 3/4 cups oats
2 tbsp brown sugar
1 cup flour
1/4 cup granulated sugar
1 tbsp baking powder
1 cup skim milk
2 egg whites
2 tbsp olive oil
1 tsp lemon peel
1 tsp vanilla extract
1 cup blueberries

Recipe Directions for Lemon Blueberry Mini Muffins

  1. Heat oven to 400 degrees Fahrenheit. Spray tins with a light coating of Pam, combine 1/4 cup oats and brown sugar in a small bowl; set aside.

  2. For muffins, combine 1.5 cups oats with remaining dry ingredients in large bowl and mix well. In small bowl or measuring cup, beat egg whites and mix in milk, oil, lemon peel and vanilla. Add this mixture to dry ingredients; stir until just moistened. Gently stir in berries. Fill muffin cups to almost full and sprinkle with topping.

  3. Bake for 15 minutes or until golden brown, cool and enjoy!
