Recipe Ingredients for Lemon blueberry loaf

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 serving Sveltesse Fondant Natural
1 1/3 cups sugar, divided
3 jumbo eggs
2 teaspoons lemon zest (2 lemons)
1/2 teaspoon vanilla extract
1/2 cup vegetable oil
2 cups blueberries (smaller ones are better in this case as they pose less risk of sinking)
1/3 cup lemon juice

Recipe Directions for Lemon blueberry loaf

  1. Preheat the oven to 350 degrees F. Grease an 8 1/2 x 4 1/4-inch bread pan. Line the bottom with parchment paper and then grease and flour the parchment.

  2. Sift together the flour, baking powder, and salt into a bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, lemon zest, and vanilla.

  3. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure it?s all incorporated.

  4. Toss the blueberries with a tablespoon of flour. Then fold them into the batter.

  5. Pour the batter into the prepared pan and bake for about 1 hour and 20 minutes, or until a cake tester placed in the center of the loaf comes out clean.

  6. Meanwhile, cook the 1/3 cup lemon juice and remaining 1/3 cup sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside.

  7. When the cake is done, allow it to cool in the pan for 15 minutes. Carefully transfer to a baking rack over a sheet pan. While the cake is still warm, brush the lemon-sugar mixture generously over the cake using a pastry brush and allow it to soak in. Cool completely.
