Recipe Ingredients for Lemon Basil Pasta with Grilled Chicken

1 lb Penne Pasta, cooked
2 tbsp Butter
2 tbsp Olive Oil
3/4 cup Lemon juice
3/4 cup Half and Half
1/4 cup 1% milk
1 1/2 cup Grated Parmesan cheese
1 salt
1 ground black pepper to taste
2 grilled chicken breasts, sliced
700 g g) (g g) whole basil leaves, chopped

Recipe Directions for Lemon Basil Pasta with Grilled Chicken

  1. Cook pasta, reserving 1 cup of hot pasta water when you drain. Set pasta aside in a colander.

  2. In the same pot, melt butter over medium heat. Squeeze in the lemon juice. Whisk together. Pour in the half and half and milk. Whisk until hot. Dump in cheese and whisk until melted. Add salt and pepper. Check consistency, adding some of the hot pasta water to loosen the sauce if needed.

  3. Pour pasta and sauce into a large serving bowl and add basil. Sprinkle remaining basil all over the top, then add sliced chicken breasts. Serve immediately!
