Makes ~ 11 ounces. A modified version of F&W's April 2009 Almond-Mint Pesto. The bright yet complex flavors are lightened a bit with chicken broth; could further reduce the oil and increase broth. Omitted parm cheese; you may sub veggie broth for chicken broth for a vegan option.

Recipe Ingredients for Lemon-Basil, Mint & Almond Pesto

3 oz raw almonds
1 garlic clove, smashed
1 1/2 oz (1 cup firmly packed) fresh basil or lemon basil leaves
1 1/2 oz (1 cup packed) fresh mint leaves
2 T lime juice or lemon juice
1 t finely grated lime zest or lemon zest
1/4 cup olive oil
1/2 c chicken broth or vegetable broth
1 t salt, to taste
1 t pepper, to taste

Recipe Directions for Lemon-Basil, Mint & Almond Pesto

  1. In a processor, pulse the almonds with the garlic until finely chopped.

  2. Add the mint and basil leaves; process until incorporated and finely chopped.

  3. With machine running, gradually add lemon or lime juice, olive oil, and chicken broth; process until smooth.

  4. If pesto is dry, gradually add more oil or broth.

  5. Season with salt and pepper.

  6. Can be made ahead. Press plastic wrap onto surface of pesto. Cover and refrigerate up to 2 days or freeze up to 1 week. Bring to room temperature before using.
