These lemon bars are an easy healthy choice. Higher in protein because of the two egg whites, but lower in cholesterol because only 1 egg yolk was used. The yolk is also a good source of Omega-3 fats. The bars also had lots of fruit which is healthy for everybody. Not to mention, the bars are also a low calorie, low fat food.

Recipe Ingredients for Lemon Bars

3/4 cup all-purpose flour, 3 tablespoons sugar, 1/4 margarine, 1 egg, 1 egg white, 2/3 cup sugar, 1 teaspoon lemon peel shredded, 2 tabl

Recipe Directions for Lemon Bars

  1. Spray baking pan with nonstick coating.

  2. In a small mixing bowl, comine the fllour and tablespoons of sugar

  3. Cut margarine until crumbly

  4. Pat mixture unto the bottom the the pan, bake in 350 oven for 15 min.

  5. For filling, combine egg and egg white

  6. Beat until frothy

  7. Add sugar and small amount of clour, the lemon juice, water, and baking powder

  8. Beat on medium speed until a little thicker

  9. Stir in peel

  10. Pour over hot baked layer in the pan

  11. bake until 20-25 until edges are light brown

  12. Cool, cut, and enjoy
