Healthy version of Lemon Cookie Bars

Recipe Ingredients for Lemon Bars

1 cup Whole Wheat Flour
1/4 cup Agave Nectar or Maple Syrup
2 tbsp Canola Oil
1/2 cup Walnuts

Filling:
3 Eggs
1/4 cup Agave Nectar or Maple Syrup
1/3 cup Fresh Lemon Juice
2 tbsp Fresh Lemon Zest
2 tbsp Whole Wheat Flour
1/4 tsp Sea Salt

Recipe Directions for Lemon Bars

  1. Preheat oven to 325 degrees. Combine all crust ingredients in a food processor and blend until mixture resembles course crumbs.

  2. Lightly grease an 8 inch square baking dish and press mixture into it to cover bottom and about ? up the sides. Bake for 15 minutes or until lightly golden.

  3. Remove from oven and raise temperature to 350 degrees.

  4. Beat eggs until fluffy. Beat in sweetener, lemon juice, lemon zest, flour and sea salt. Pour into crust.

  5. Bake for about 15-18 minutes or until filling is set. Cool and cut into bars. Serve.
