Recipe Ingredients for Lemon Bars

1 3/4 cups flour
0.66 cups confectioners' sugar
1/4 cup cornstarch
3/4 teaspoons salt
12 tablespoons butter
4 eggs
1.33 cups sugar
3 tablespoons flour
2 teaspoons lemon zest
0.66 cups lemon juice
0.33 cups nonfat milk
1/8 teaspoon salt

Recipe Directions for Lemon Bars

  1. For the crust, combine flour, confectioners' sugar, cornstarch, salt, and butter in bowl of food processor. Blend and pulse until mixture is pale yellow and resembles coarse meal.

  2. Sprinkle mixture into a 9x13 pan lined with waxed paper or parchment paper.

  3. Press the mixture firmly with fingers into an even, 1/4 inch layer over entire pan bottom and about 1/2 inch up sides.

  4. Refrigerate for 30 minutes, then bake until golden brown, about 20 minutes.

  5. While crust is baking, whisk eggs, sugar and flour in a medium bowl.

  6. Stir in lemon zest, juice, milk and salt, blending well.

  7. After the crust has backed, reduce oven temperature to 325. Reblend filling as necessary, then pour onto hot crust.

  8. Bake an additional 20 minutes, until filling feels firm when touched lightly.

  9. Transfer pan to wire rack and cool for at least 30 minutes.
