Cook's Illustrated Perfect Lemon Bars

Recipe Ingredients for Lemon Bars

1 3/4 cups flour
2/3 cup powdered sugar
1/4 cup cornstarch
3/4 tsp salt
12 tbsp unsalted butter
4 large eggs
1 1/3 cups granulated sugar
3 tbsp flour
2 tsp lemon zest
2/3 cup lemon juice
1/3 cup milk
1/8 tsp salt

Recipe Directions for Lemon Bars

  1. Crust:

  2. Oven rack in middle position, at 350 degrees. Lightly butter 13x9 baking dish, line with parchment/wax paper. Dot paper with butter, then lay 2nd sheet crosswise over it. Mix flour, confectioner?s sugar, cornstarch, salt. Add butter (grate frozen butter into mixture), mix until mixture is pale yellow. Put mixture in pan, press firmly with fingers into even, 1/3 inch layer over pan bottom and inch up sides. Refrigerate for 30 minutes, then bake until golden brown (approx. 20 mins).

  3. Filling: Whisk eggs, sugar, flour, then stir in zest, juice, milk and salt to blend well.

  4. To finish: Oven temp to 325 degrees. Stir filling to reblend, pour onto warm crust. Bake until filling feels firm, about 20 minutes. Cool pan to room temp, about 30 minutes. Grasp the edges of the lengthwise paper and lift bars to cutting board. Peal paper down, cut, sprinkle with sugar if desired.
