Recipe Ingredients for Lemon Bars

1 3/4 c flour
2/3 c powdered sugar
1/4 c cornstarch
1 c vegan butter
3 tbsp agar agar flakes
1 1/3 c water
1 tbsp lemon zest
2/3 c fresh lemon juice
3 tbsp arrowroot powder
1 1/4 c sugar
1/8 tsp turmeric
1/4 c soy milk

Recipe Directions for Lemon Bars

  1. Pulse the flour, powdered sugar, and cornstarch in a food processor or with an electric hand mixer. Add the vegan butter in spoonfuls and blend, 8 to 10 seconds, then pulse until the mixture resembles coarse meal. Sprinkle the mixture in a lightly greased 9x13 baking pan. Press it firmly into an even layer with slightly raised sides to hold the filling (wax paper works well for this). Refrigerate for about 30 minutes.

  2. Preheat the oven to 350 F and bake the flour layer for 30 to 40 minutes, until golden brown. Remove from oven and let cool.

  3. In a sauce pot, soak the agar agar in the water for 15 minutes. Meanwhile, zest the lemons and squeeze the lemon juice. Mix the arrowroot powder into the lemon juice to dissolve.

  4. When the agar agar has been soaking for 15 minutes, turn the heat up and bring to a boil. Boil until the agar agar has completely dissolved, about 10 minutes for flakes (less for powder). Add the sugar and turmeric and boil until dissolved, about 3 minutes. Lower the heat to medium and add the arrowroot powder mixture, then add the zest and soy milk.

  5. Whisk constantly until the mixture thickens, about 4 minutes. It should not be rapidly boiling, but a low boil is okay.

  6. Pour the mixture into the prepared crust. Cool for 20 minutes at room temperature and then refrigerate for at least 3 hours, until the filling is only slightly jiggly and set. Use a sifter to sprinkle the bars with powdered sugar. Slice into squares and serve.
