Lemon Asparagus & Chicken Recipe

Very quick stir fry which I created on accident! This is a meal in itself. I enjoy it after a good workout. You will want to have some grilled chicken on hand. I grill some about once a week, and keep it in the fridge for later use.

Recipe Ingredients for Lemon Asparagus & Chicken

1 lb of asparagus
2 T lemon juice
2 garlic cloves
1 salt
1 pepper
1 T sesame seeds (optional)
1 T olive oil
2 grilled chicken breasts

Recipe Directions for Lemon Asparagus & Chicken

  1. Crush or dice the garlic and sautee in the olive oil along with the sesame seeds for just a couple minutes or until the garlic is starting to toast a little.

  2. Cut the asparagus into one inch segments discarding tough ends. Toss them into the pan and drizzle on the lemon juice, salt and pepper. Cover with a lid to allow steaming action. Stir frequently for about 5 to 7 minutes.

  3. Dice up the chicken and toss into the pan as well, and continue to stir for about another two to three minutes.

  4. Voila, you have a perfect, delicious, as well as very healthy meal!
