Crunchy baked fish that more yummy than fried! (and healthier too!)

Recipe Ingredients for Lemon and Almond Crusted Fish

1 fruit without seeds Lemons
1/2 cup Almonds Sliced
1 tbsp Dill Weed, Dried
1 tbsp Extra Virgin Olive Oil
1 tsp Salt, Table
1 dash Pepper, Black
20 oz Tilapia Fillets
4 tsp Classic Dijon Mustard
2 clove Garlic
16 oz Organic Baby Spinach

Recipe Directions for Lemon and Almond Crusted Fish

  1. Preheat oven to 400. Line baking sheet with foil, and spray with nonstick spray.

  2. Combine zest of lemon, crushed almond, dill, 1 tbsp oil, 1/2 tsp salt and pepper in a small bowl. Place fish on prepared baking sheet and spread 1 tsp mustard on each filet. Divide almond mixture evenly and press onto mustard.

  3. Bake fish until opaque, about 7-9 minutes.

  4. Meanwhile, heat heat the remaining 2 teaspoons oil in a Dutch oven over medium heat. Add garlic and cook, stirring, until fragrant but not brown, about 30 seconds. Stir in spinach, lemon juice and the remaining 1/2 teaspoon salt; season with pepper. Cook, stirring often, until the spinach is just wilted, 2 to 4 minutes. Cover to keep warm. Serve the fish with the spinach and lemon wedges, if desired.
