Very dense cake with tart/sweet contrast.

Recipe Ingredients for Lemon Almond Cake

1 pound almond paste
1 1/2 tablespoons lemon zest
1 stick butter
2/3 cups olive oil
1 1/2 cup sugar
1 cup flour
1 1/4 teaspoon baking powder
1/2 cup lemon juice
1/2 cup sugar
8 eggs

Recipe Directions for Lemon Almond Cake

  1. Grease and flour a 10 inch cake pan, and line the bottom with a circle of parchment paper.

  2. Cream together 1 stick butter, 2/3 cup olive oil, and 1 ½ Cup sugar.

  3. Add 1 lb. Almond paste (room temperature) and 1 ½ Tablespoons lemon zest

  4. Mix well.

  5. Add 8 eggs, one at a time mixing well.

  6. Whisk together 1 cup flour and 1 ¼ Teaspoon baking powder...add to food processor with machine on low.

  7. Pour into pan.

  8. Bake 40 - 50 minutes at 325° until golden brown, slight crack on top in center---cool 5 minutes in pan, then poke holes in top surface pf cake.

  9. Baste w/lemon glaze (1/2 cup lemon juice/ 1/2 cup sugar in small pan, heat to dissolve & thicken, 5 min..) Cool 15 minutes more, then un-mold.
