Recipe Ingredients for Lei's Mashed Potatoes

2 lbs. potatoes, peeled and diced
1 c. Earth Balance
1 c. vegetable broth
1/2 tbsp. salt
1/2 tbsp. black pepper

Recipe Directions for Lei's Mashed Potatoes

  1. Place whole, unpeeled potatoes in a pot of salted water and bring to a boil. Reduce heat and simmer until fork-tender (about 15 minutes).

  2. Remove pan from heat and drain. Place potatoes back into the pot and return to heat. Stir constantly for 2 - 3 minutes to dehydrate, then remove from heat. Add Earth Balance; using a masher, mash Earth Balance into potatoes. Add broth until desired consistency. Season with salt and pepper.
