Makes seven to eight 1/2-cup servings; serve with rice or crusty bread. This dish is better the next day.

Recipe Ingredients for Legumes: Easy Beans

252 g white beans such as great northern or cannellini (any bean will work) - 1 cup dry
1 onion
3 T. canola oil
1 tsp. sweet red pepper
2 links cooked chicken and apple sausage, quartered lengthwise and sliced
1 tsp. salt (or Vegeta seasoning), to taste

Recipe Directions for Legumes: Easy Beans

  1. Clean the beans and soak them in warm water for a minimum of 20-30 minutes or overnight.

  2. Drain beans and put them in a pot. Add warm water to about 1" above beans.

  3. Bring to a boil. After 15-20 minutes, drain and add fresh warm water well over the beans.

  4. Bring back to a boil and add onion, oil, and red pepper. Cook over medium heat until beans are soft about 1.5 to 2 hours. If water level gets too low, add water to keep them from burning.

  5. Near the end of cooking, add chicken sausage. Allow the water to cook down, stirring frequently. Adjust the water level according to your taste -- depending on how liquid or creamy you like your beans.

  6. Once beans are as soft as you?d like, add salt or Vegeta to taste.

  7. Serve with rice or crusty bread.

  8. You can substitute other meats for chicken sausage: Bits of pork ribs, bacon, or other sausage.

  9. Also optional to add chopped parsley or basil.
