Recipe Ingredients for Legume Va-Va-Voom

2 cups brown rice, cooked
2 avocado
7 oz lentils
1/2 cup peanuts, chopped
3 cups romaine lettuce, 8 leaves

Recipe Directions for Legume Va-Va-Voom

After cooking the rice and before it cools completely, halve the avocado, removing the pits, scoop out the pulp, and mash it into the rice. When the ingredients have blended, add the lentils and peanuts. Season with pepper. Serve portions rolled in washed romaine leaves.
