Recipe Ingredients for Leftovers and rice

1 tbsp olive oil
1 onion, minced
2 cloves garlic, minced
8 oz mushrooms, sliced
1 1/4 cups half and half
1 cup rice
4 cups chicken stock
4 oz steak, cooked
6 oz chicken, cooked

Recipe Directions for Leftovers and rice

  1. Heat olive oil in large pan. Mince onion and garlic and saute in pan until translucent, reduce heat. Add mushrooms and heat until cooked. Add half and half (or milk if thats all you have) and rice and bring to a simmer. The original recipe was for risotto so they recommend using short grain arborio rice but I have always used long grain since I keep it in my pantry.

  2. Begin adding chicken stock 1 cup at a time cooking liquid down some and then adding another cup. You may NOT NEED all 4 cups. Just add, stir, cook, repeat slowly until the rice is fully cooked and you have reached the desired liquid consistency.

  3. Add cooked leftovers like steak, chicken, turkey, or shrimp and cook until heated thoroughly. Serve hot.

  4. Makes 6 1-cup servings. Tips: No mushrooms? Use another vegetable or vegetable leftovers. Picky eaters? Chop up vegetables prior to cooking and they won't be able to identify them.
