Recipe Ingredients for Leftovers Omelet

3 eggs
1 tsp. sour cream
6 green onions, chopped
1 tomato, seeded and chopped
2 oz. goat cheese
2 tbs. butter
1 tbs. olive oil
4 oz. baby Bella mushrooms, sliced

Recipe Directions for Leftovers Omelet

  1. Brown mushrooms in hot butter and olive oil, about a teaspoon of each. Cook until browned, set aside.

  2. Seed and chop tomato, and chop green onions. Saute in butter and olive oil, about a teaspoon of each.

  3. Whip the 3 eggs with the teaspoon of sour cream then pour into a large heated skillet with about a teaspoon of melted butter and a teaspoon of olive oil.

  4. Let cook for a minute then dot one side with goat cheese, add cooked mushrooms and tomato and onion on same side. Fold other side of omelet over cheese and vegetables. Let cook for another minute or so and then plate.
