Recipe Ingredients for leftover vegetable bake

1 cup brown rice
1 cup red pepper
1 cup zucchini
1 cup broccoli
1 cup mushroom caps
1/2 cup kidney beans
150 g ground beef
1 tbsp olive oil
1 tbsp red onion
1 tsp minced garlic
3 eggs
1/2 cup shredded cheddar

Recipe Directions for leftover vegetable bake

  1. heat olive oil on medium heat and fry onion

  2. and garlic until fragrant. add other vegetables for a few minutes, then all

  3. leftover rice (or other) and meat.

  4. when heated, add eggs and seasoning of

  5. your choice, top with cheese and serve
