Mexican style enchilada casserole made with leftover roasted turkey with a blend of white and dark meat

Recipe Ingredients for Leftover Turkey Enchilada Casserole

550 grams Turkey, All Classes, Meat Only
6 serving White Corn Tortillas
794 grams Enchilada Sauce
2 medium raw Onion Yellow
396 grams Pepper Strips
6 tsp Garlic
1 serving, raw Cilantro
227 grams Western Family Shredded Cheese Taco Blend

Recipe Directions for Leftover Turkey Enchilada Casserole

  1. 1. Shred left-over turkey in smallish bits

  2. 2. finely chop onions and saute them with olive oil spray

  3. 3. Add entire bag of sliced pepper strips

  4. 4. Add crushed garlic

  5. 5. Add cilantro (should be chopped)

  6. 6. Add salt, pepper, chili powder, cumin and italian herb blend to taste

  7. 7. Stir fry vegetables until they are soft, then add shredded turkey and heat for approximately 5-6 minutes

  8. 8. Add can of enchilada sauce and simmer under medium low heat for about 20-25 minutes

  9. 9. In a baking pan, spray with olive oil, then layer 1/2 of corn tortillas (they can be cut to fit)

  10. 10. Spoon in turkey and vegetable mixture evenly over the tortillas

  11. 11. sprinkle 1/2 of the cheese over the turkey mixture

  12. 12. Layer remaining tortillas and repeat the process

  13. 13. Place in oven heated to 375 degrees for about 12-15 minutes, or until the cheese is melted on the top

  14. 14. Remove from oven and let rest for a few minutes before cutting and serving

  15. 15. Should make 12 servings
