Recipe Ingredients for Leftover Turkey Chowder

1 large onion chopped
1 cup finely chopped carrots
1 cup finely chopped celery
2 cups cooked potatoes, cubed
14 oz. canned diced tomatoes
1/4 cup margarine
1/4 cup flour
2 cups chicken broth
2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups diced cooked turkey

Recipe Directions for Leftover Turkey Chowder

  1. Sauté onions, carrots, celery in butter until soft but not brown.

  2. Blend in flour.

  3. Gradually stir in broth, then milk.

  4. Cook, stirring constantly, until mixture thickens.

  5. Stir in salt, pepper, potatoes, tomatoes, and turkey.

  6. Simmer 30 minutes to 1 hour or until turkey is heated through.
