A great way to use leftover rice to make a tasty lunch. Also good as an accompaniment to grilled fish or chicken dishes.

Recipe Ingredients for Leftover rice salad

1 tsp olive oil
1/2 tsp cumin
2 oz basmati rice (cooked leftovers)
1/2 red pepper, diced
1 spring onion, sliced
1 tomato, chopped
1 tbsp lemon juice
1/2 tbsp pumpkin seeds
1/2 tbsp pine nuts

Recipe Directions for Leftover rice salad

Heat the oil over a medium heat and add the onion, cumin and pepper. When starting to soften a little add the rice and warm through. Add the tomato, seeds and nuts along with the juice of the 1/2 lemon and stir through. Serve warm immediately, or refridgerate and eat cold.
