Use up leftover rice! Can add other flavourings, cinnamon, raisins, apricots, etc. (banana is good!). Serve with milk.

Recipe Ingredients for Leftover Rice Pudding Custard

3 cup brown rice, cooked with water
2 cup 2% milk
1 cup white sugar
1/4 tsp salt
3 eggs
1 tsp vanilla

Recipe Directions for Leftover Rice Pudding Custard

Wisk together egg vanilla and milk in large casserole dish. Add sugar, salt and rice. Mix well. Place dish in baking pan with 2 inches water. Bake 350 oven for 1hr15min or until set.
