Yummy soup made from leftovers in fridge.

Recipe Ingredients for Leftover potato soup

1 tbsp butter without salt
3 oz onion
10 1/2 oz potato, boiled
3 1/2 oz sweet potato, cooked without salt
2 c. chicken stock
1 pinch salt
1 pinch freshly ground black pepper
1/2 tsp ground turmeric

Recipe Directions for Leftover potato soup

  1. Saute onion in melted butter with pinch of salt until softened and slightly brown.

  2. Add chicken stock and bring to boil. 2 min.

  3. Add potatoes and heat through.

  4. Add seasoning (pepper and turmeric) and puree with stick blender.

  5. Taste and season accordingly.
