How to use leftover pork sausage and pork loin. . . this is gluten-free as long as the sausage is (not all are).

Recipe Ingredients for Leftover Pork Gumbo

24 oz cooked Andouille sausage
12 oz roasted pork loin
1 1/2 cup buckwheat groats
3 cups low sodium V-8
11 oz canned corn
28 oz canned diced tomatoes
2 T olive oil
1 T basil
2 T parsley
1 cup green onion

Recipe Directions for Leftover Pork Gumbo

  1. Cut up sausage and saute briefly in a large cast iron pot in olive oil

  2. Add groats and V-8 and stir.

  3. Bring to a boil and simmer for 10 minutes - add up to 1 cup of water if it seems dry.

  4. Add chopped green onions and let sit, covered for 10 minutes.

  5. Add remaining ingredients and reheat to a simmer before serving.
