This is a relatively low calorie way to use up leftover pork, chicken, or turkey. The nutrient values are based on pork roast being the meat used.

Recipe Ingredients for leftover meat & rice soup

3 cups pork shoulder, cooked and chopped
2 cups broth, from pan used for roasting
6 cups water
2 cups uncooked rice
4 cloves garlic, medium
1/2 cup onion

Recipe Directions for leftover meat & rice soup

  1. I originally cooked this pork roast in my crock pot seasoned with Mrs. Dash Garlic and Herb, pepper, and Basil.

  2. Chop or shredd 3 cups of leftover roast

  3. Put meat, broth and enough water to make 8 cups liquid, rice, garlic, onion and any additional seasonings that you like (if you add any salt, be sure to account for additional sodium intake) in large pan.

  4. Bring to a boil and cook until rice is done.

  5. Remove from heat and serve.
