An excellent and delicious way to use up leftover lamb - quick and healthy too!

Recipe Ingredients for Leftover Lamb Rogan Josh

2 onions, diced
108 g lamb, trimmed and diced
300 g plum tomatoes, tinned
2 garlic cloves, sliced
1 chili pepper, sliced
5 mushrooms, chopped
3 tsp curry powder or garam masala if available
2 tsp turmeric
1 tsp ground coriander
1 tsp cumin
1 tbsp olive oil
80 g basmati rice

Recipe Directions for Leftover Lamb Rogan Josh

  1. Heat olive oil in a wok or heavy-based frying pan.

  2. Add onions and fry for 5 mins until softening.

  3. Add chopped garlic and chilli and stir for 1 minute, then add the rest of the spices.

  4. Fry for 5 mins then add tinned tomatoes.

  5. Reduce heat and simmer for at least 10 mins, preferably as long as you can be bothered to wait for dinner for!

  6. Add mushrooms and trimmed lamb. (If using fresh lamb, which is also excellent, add this just after the spices.)

  7. Simmer for about half an hour and time rice to cook by end of simmering.

  8. Serve on a warm plate, with choice of bread or poppadom if desired.
