Recipe Ingredients for Leftover Ham Soup

3 1/2 cups Vegetable Stock
1 tbsp Olive Oil
2 tbsp Tomato Paste
1 tbsp Dijon Mustard
10 oz Green Bell Pepper, diced
6 1/2 oz White Onion, sliced
9 oz Button Mushrooms, sliced
7 oz Ham, diced
1/2 oz Garlic, chopped fine
3 oz Carrots, sliced
6 1/2 oz Cucumber, sliced
11 oz Napa Cabbage, sliced fairly thin
1 tsp Italian Seasoning
1 tsp Red Pepper Flakes
1 Salt
1 Pepper

Recipe Directions for Leftover Ham Soup

  1. Bring stock to a simmer in a pot

  2. In a larger soup pot add olive oil and bring to a medium high heat.

  3. Toss in bell pepper, onion, mushrooms, ham, and garlic into the oil.

  4. Cook until the vegetables soften, then add the tomato paste, mustard, red pepper flakes, and italian seasoning.

  5. Stir until evenly distributed, then carefully pour the simmering vegetable stock into the pot.

  6. Add the cucumber and cabbage, stir and then season to taste with the salt and pepper.

  7. Let the soup simmer for some time to blend the flavors.
