Recipe Ingredients for Leftover Christmas soup

1 lbs turkey
32 ounces chicken broth
2 cups celery
2 cups onions
2 cups carrots
16 ounces egg noodles
1/2 teaspoon salt
1 tablespoon lemon juice
1 teaspoon pepper
1 teaspoon sage
1 teaspoon rosemary
1/2 cup parsley

Recipe Directions for Leftover Christmas soup

  1. cook turkey leftovers giblets and neckbones in water to cover. Add 1 onion and 2 ribs celery, sage, rosemary, and parsley, salt and pepper - simmer 1 hour

  2. remove from heat and cool

  3. strain broth and set aside

  4. rub turkey meat through fingers a little at a time to remove all tiny bones - there will be a lot of them - be vigilant

  5. add deboned turkey meat to reserved strained broth

  6. add boxed or canned chicken broth

  7. add rest of celery onions carrots noodles salt pepper and lemon juice.

  8. taste - add more salt, pepper, sage, parsley, and rosemary if bland
