Leftover roast chicken, pasta sauce, some diced veggies and macaroni.

Recipe Ingredients for Leftover Chicken Macaroni for 2

135 g Tomato and Basil Basilico
75 g Q Light Milk
15 g frozen spinach, not drained
30 g mushrooms, chopped
1 clove garlic, finely chopped
1/2 tsp extra virgin olive oil
25 g Chicken, Dark Meat
35 g canned corn
80 g Macaroni, Whole-wheat, Dry

Recipe Directions for Leftover Chicken Macaroni for 2

  1. Heat oil. Sauté garlic & mushrooms till just soft. Add in chicken and cook for 2 min. Set aside.

  2. Heat sauce, milk and spinach in a small saucepan till it boils. Add in garlic, mushrooms and chicken. Cook for a few minutes.

  3. Boil macaroni, drain and combine with sauce. Add in corn.

  4. Serve warm with crusty bread.
