Great for left over turkey, chicken or pork

Recipe Ingredients for Left-over Turkey Faux Cassoulet (makes 8 6.5oz servings)

15 oz white kidney beans
3 c low sodium chicken broth
1 onion
1/2 tablespoon olive oil
2 teaspoons garlic
1 tablespoon tomato paste
15 oz turkey
3 oz Andouille Sausage
1 teaspoon dried thyme
1 cup dry white wine
2 tablespoons fresh parsley
1/2 teaspoon salt

Recipe Directions for Left-over Turkey Faux Cassoulet (makes 8 6.5oz servings)

  1. In a large pot or dutch oven saute sausage until browned, remove and strain off most of the fat.

  2. Add olive oil if needed and Put sausage back in pot and add onions and garlic and brown.

  3. Add wine to deglaze and then add broth and thyme. Bring to a simmer.

  4. Add tomato paste and beans, bring back to simmer and add turkey. Bring back to simmer and add parsley. Turn off heat and let it sit for about ten minutes for flavors to marry.
