Something I made up from what was in the fridge. Can also be served with sour cream and cheese

Recipe Ingredients for left over roast beef fajitas

4 flour tortillas
8 cups spinach
1 lb roast beef
1 tbsp green onions
1 tsp minced cilantro
1/4 tsp garlic salt
1/4 tsp lime juice
1/2 medium green pepper
3/4 c Picante Sauce
1 tomato

Recipe Directions for left over roast beef fajitas

  1. Heat the shredded roast beef with salsa, peppers, onions, garlic salt, cumin to taste, until simmering.

  2. Add lime juice & cilantro.

  3. Serve rolled in tortillas with spinach and tomatoes.
