When I was a kid, I always preferred my dad's preparation of the roast's leftovers over the roast itself.

Recipe Ingredients for Left over pot roast stew

5 medium potatoes
10 ounces chuck roast
1 cup sliced carrots
1 1/2 cups cooked cabbage
2 cups chicken stock
2 cups water
2 T butter
2 T flour

Recipe Directions for Left over pot roast stew

  1. Cut roast and vegetables into bites

  2. Make a roux and add liquids.

  3. Combine solids and liquids, heat to hot.

  4. Done.
