This is a good way to use up your left over mashed potatoes.

Recipe Ingredients for Left over mashed potato soup

2 cup mashed potatoes
1/4 cup fat free sour cream
2 cups skim milk
1 tsp ground black pepper
1 tbs light butter
1/2 large onion diced
1 tbs chopped garlic
1 cup reduced fat cheddar cheese
15 oz corn
1 cup fat free chicken broth
4 bacon
4 potatoes
1/2 cup chopped carrot
1/2 cup chopped celery
2 cup water
1 tsp sea salt

Recipe Directions for Left over mashed potato soup

Basically you just mix everything together. Brown the bacon chop it, chop the veggies and mix all the ingrds in a crock pot and cook on high for 2 hrs or until veggies are tender.
