This is a great way to make a refershing lunch with left over chicken and rice

Recipe Ingredients for Left over Chicken Salad

3 oz grilled chicken breast
1/2 cup cooked white rice
2 cups romaine lettuce
3 fresh mushrooms (sliced)
3 tbsp balsamic vinaigrette dressing (wish bone)

Recipe Directions for Left over Chicken Salad

  1. Slice mushrooms

  2. Chop chicken into bite sized pieces

  3. reheat rice and sliced mushrooms in microwave for 1-2 minutes

  4. put lettuce in bowl

  5. top with cold chicken pieces

  6. put warm rice and mushrooms on top of chicken

  7. pour dressing over all
