One dish Breakfast casserole great for dinner as well.

Recipe Ingredients for Leesa's Breakfast Casserole

1 cup chopped green pepper
1 cup chopped red pepper
1 small onion
3 cups egg beaters
1 cup skim milk
3/4 cup 2% cheddar cheese
1 tsp italian seasoning
1/4 tsp black pepper
1 cup diced potatos
1 lb pork sausage

Recipe Directions for Leesa's Breakfast Casserole

  1. Spray 9X13 in pan with cooking spray, place bread evenly in bottom of pan.

  2. Fry sausage, then rinse in hot water return to pan add peppers & onions then cook appx 5 min. pour mixture evenly over bread.

  3. Pour potatos evenly over mixture.

  4. Mix egg & milk whisk together & then pour evenly over potatos and top with cheese.

  5. Bake @ 350 for 40-50 minutes
