Recipe Ingredients for Lee's Jambalaya

1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
3 stalks celery, chopped
6 cloves garlic, chopped
14 1/2 ounces chicken broth
5 1/2 ounces water
1 can diced tomatoes
2 cups rice, uncooked
1 small tomato, chopped
6 ounces cooked chicken, chopped
1/2 t salt
1/2 t pepper
1/2 t cayenne pepper

Recipe Directions for Lee's Jambalaya

  1. Saute the first 5 ingredients in a small amount of chicken broth with the spices until softened slightly.

  2. Add broth, water, canned tomatoes, and rice.

  3. Bring to a boil.

  4. Cover, turn heat down to medium low, and simmer for 30 minutes, stirring once.

  5. Add fresh tomatoes and chicken during last 5 minutes of cooking.
