**Feel free to add a bay leaf, hot sauce, white pepper or any herb you would like to this dish. Soup is very forgiving and you may tweak these measurements however you like. These are just guidelines.**

Recipe Ingredients for Leeky White Bean & Potato Soup

1 cup red potatoes
3/4 cup leek
3 cloves garlic
1/2 cup sweet red pepper
1/2 cup red onion
2 cups white beans
1 tbsp vegetable oil
3/4 tbsp sea salt
1 tsp black pepper
2 tbsp fresh rosemary

Recipe Directions for Leeky White Bean & Potato Soup

  1. First, rinse leeks in cold water to remove silt;then chop into small pieces using most of green stalk except for the ends and discarding the bottom root end.

  2. Chop red onion and sweet bell pepper into small pieces similar in size to the leek.

  3. Add oil to pot and add onion, leek, and sweet pepper, cook until red onions are translucent and pale in color.

  4. Add garlic (minced) and continue to sautee veggies for a couple minutes being careful to avoid scorching the garlic as it will taste bitter if cooked on too high a heat ( I suggest 3/4 heat for this process, or med-high).

  5. Add chopped potatoes and mix ingredients together--adding your sea salt and pepper to taste.

  6. Add one cup (or can) or white beans along with sprig of fresh rosemary and a cup of water, reduce to low and cover.

  7. Cook for 2 hours, adding liquid when necessary. Potatoes should fall apart and create thick soup.
