1 tbsp Olive Oil
2 cup, pieces or slices Mushrooms
500 grams Brussels Sprouts
1 medium Orange Hothouse Bell Pepper
1 cup, diced Celery
1 cup Leeks, (Bulb And Lower Leaf-portion)
1 serving Garlic Cloves
1 tsp Ginger Root
5 medium whole (2-3/5" dia) Tomatoes, Red, Ripe

sweat onions and mushrooms. add brussel sprouts and simmer for 15 minutes. add remaining ingredients and simmer for about 10 more minutes. serve with quinoa or rice.
