This makes a nice Summer or Fall vegetarian appetizer, side vegetable, or salad course. It has no cholesterol.

Recipe Ingredients for Leeks with Beets and Walnut Dressing

2 lbs leeks
2 red beets, cooked
2 T walnuts
2 T red wine vinegar
3 T olive oil
3 T walnut oil
2 T parsley, chopped
1 Salt and freshly ground pepper

Recipe Directions for Leeks with Beets and Walnut Dressing

  1. Cut off the green parts and bottoms of the leeks, wash well and cook for 20 minutes in salted boiling water. Drain well and reserve.

  2. Peel the cooked beets and put in blender. Add the walnuts and keep mixing while adding vinegar and oils. Season to taste.

  3. Serve the lukewarm leeks on serving dish, sprinkle with parsley and pour dressing on top.
