Quinoa with leeks and yellow tomato

Recipe Ingredients for Leek and Yellow Tomato Quinoa

1 1/2 cup quinoa
2 cups water
1 tbsp. butter
2 cups leeks, chopped
1/4 cup chicken broth, low sodium
3 tbsp. olive oil
2 tomatoes, yellow, chopped
3 tbsp. green onions, chopped
3 tbsp. basil, fresh chopped
1 tbsp. lemon juice

Recipe Directions for Leek and Yellow Tomato Quinoa

  1. Strain quinoa with running cold water

  2. Mix quinoa, water in saucepan

  3. Bring to a boil

  4. Reduce heat to med low, cover and simmer until water is absorbed - about 15 minutes

  5. Drain and set aside

  6. Melt butter in separate large non stick skillet over medium heat

  7. Add leeks, saute until beginning to soften - 5 min

  8. Add broth and simmer for another 5

  9. Add quinoa, oil and stir until heated through.

  10. Stir in remaining ingredients

  11. Season with salt & pepper
