Recipe Ingredients for Leek-y Chicken & Couscous

1 1/2 cups chicken broth
2 tbsp butter
1/4 cup raisins
1 1/2 cups couscous
2 tbsp olive oil
24 ounces chicken
2 leeks
1 cup white wine

Recipe Directions for Leek-y Chicken & Couscous

  1. Heat chicken stock and 1 tbsp butter. When boiblin, add chopped raisin and couscous. Take off heat and cover tightly.

  2. Heat skillet over medium-high heat and add olive oil. Add chicken chopped into bite size pieces in a single layer. Season with salt and pepper. While borowning, trim green tops and roots off leeks.

  3. Cut leeks in half lenghtwise and then 1 inch wide half moons. Rinse in a colader, seperating layers to get rid of dirt.

  4. Add to chicken and wilt - 2-3 min. Add wine and cook down by half, 3-4 min. Add remaining tbsp butter and melt into sauce. Fluff couscous and stir in some parsley. Place bed of couscous on dinner plate and top with chicken & leeks.
