Recipe Ingredients for Leek and Vegetable soup

1 sweet potato, bite size pieces
4 red onions, cut into thin wedges
4 carrots, thickly sliced
4 leeks, thickly sliced
1 small rutabaga, cut into chunks
4 medium potatoes, cut into chunks
2 tbsp olive oil
1 tsp fresh thyme
10 cloves garlic
4 cups vegetable broth
6 tbsp rolled oats
1 dash salt
1 dash pepper

Recipe Directions for Leek and Vegetable soup

  1. Preheat the oven 400 degrees. Cut the sweet potato into bite size pieces, then place them in a large roasting pan. Add the onions, carrots, leeks, rutbaga, and potatoes, and spread them in an even layer.

  2. Drizzle the olive oil over the vegetables. Add the thyme and unpeeled garlic cloves. Toss well and roast for 45 minutes, until all the vegetables are tender and well browned in places.

  3. Discard the thyme from the roasted vegetables. Squeeze all the garlic cloves from their skins over the other vegetables in the pan.

  4. Process about half the vegetables with the stock and oats in a food processor or blender until smooth.

  5. Pour the puree into a pan, bring to a boil and season to taste. Add the remaining vegetables and heat through.

  6. Ladle the soup into bowls and garnish with fresh thyme sprigs.
