I modified a recipe by No Name because it sounded so easy. This soup has a few more veggies, so it's not really "Leek Soup," but it still tastes great and it's still easy.

Recipe Ingredients for Leek & vegetable soup

2 leeks, chopped
1/4 cup celery, chopped
1 medium carrot, chopped
3 cups potatoes, chopped
4 cups chicken broth
1 teaspoon vegetable oil

Recipe Directions for Leek & vegetable soup

  1. Heat oil over medium heat and saute leeks for until soft.

  2. Add remaining veggies and broth and bring to boil. Boil for 2 minutes.

  3. Reduce heat and simmer until potatos are tender.

  4. Season to taste with salt and pepper.

  5. Use a hand blender to puree the soup.

  6. Reheat until bubbling and serve.
