Recipe Ingredients for Leek and Tomato Sauce

2 cup Leeks, (Bulb And Lower Leaf-portion)
2 clove Garlic
5 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 tbsp Olive Oil, Extra Virgin
8 fl oz Organic Low Sodium Chicken Broth

Recipe Directions for Leek and Tomato Sauce

Heat 2 tablespoons oil in heavy large skillet over medium heat. Add leeks, garlic, thyme, and bay leaf. Sauté until leeks are tender, about 5 minutes. Add vegetable broth and wine; boil 5 minutes. Add tomatoes with juices. Boil until sauce thickens, about 5 minutes. Season sauce to taste with salt and pepper.
